Whole Wheat Banana/Craisin Muffins

Introduction

1 - cup Whole Wheat flour
2 Tbsp. Flax seed
1 - tbsp. baking powder
1/2 tsp. baking soda
1/8 tsp.salt
1 - cup mashed overipe bananas
1/4 cup sugar
1 large egg
1/2 tsp. vanilla extract
1/4 cup unsweetened applesauce
1/4 cup craisins
1/4 cup chopped walnuts

Prepare muffin tins ... preheat oven to 350 deg.
Combine flour, flax seed, baking powder, baking soda, salt, craisins & walnuts. Shift together.

In separate bowl, combine banana, sugar, egg & vanilla extract. Blend well and add applesauce.

Combine dry mixture with the banana mixture ... blend just enough to combine (don't over do it!)

Put the batter into muffin cups and bake for 13 to 15 minutes. Check the centers with a toothpick..

Makes 12 servings.
