Reduced Sugar Lemon Bars

Ingredients

    * 1 1/3 cup white all-purpose flour
    * 5 Tbsp packed light brown sugar
    * 8 tsp no-salt hard margarine
    * 4 egg
    * 1/2 tsp vanilla extract
    * 1 1/2 cup McNeil Nutritionals SPLENDA No Calorie Sweetener, finely blended into powder
    * 3/4 cup fresh lemon juice
    * 2 tsp lemon zest

Directions

* Preheat oven to 350F.

* To make crust, mix flour and light brown sugar using a food processor until fully incorporated. Toss butter into flour mixture and pulse to combine using short bursts of power until butter is cut into tiny pea-sized pieces and dough appears lumpy. Sprinkle crust mixture onto an ungreased 13 X 9 X 2-inch baking pan as evenly as possible; press down with a spatula to create a packed surface. Place crust in middle of oven and bake until golden, about 20 minutes.

I adapted this recipe so it will have fewer carbs. My hubby loves sweets but he is diabetic ... so we swapped out the sugar for splenda. I blended it in my Magic Bullet to a fine powder and it worked wonderfully!


* Meanwhile, to make lemon topping, beat eggs in a medium bowl with an electric mixer until well blended. Add vanilla extract and 3/4 cup of powdered sugar; mix well. Add lemon juice and remaining powdered sugar; mix until powdered sugar is completely dissolved and then add zest.

* As soon as crust us finished, remove from oven and reduce oven temperature to 300F. Immediately pour lemon mixture over hot crust. Bake completely; cool, and cut into 24 bars. Yields 1 bar per serving.

  • I agree with Clairegrover. These are not good. Something else must be missing from the recipe, other than just sugar. They didn't taste good at all. I will not use this recipe again. Sorry - 7/26/10

  • I've gotta say, notwithstanding the healthy modifications of this recipe, I will NEVER make it again. Honestly, it was not tasty. I'm giving it 2 stars for the effort put into creating this recipe as a healthier replacement, but I'd way rather have 1 regular lemon bar than 2 of these. Sorry. - 5/9/10

  • My bf's mom loves lemon bars and she usually does it from a box. so i was glad to find somthing that wouldn't send her blood sugar through the roof. My boyfriends the same way. so i think its a fantastic recipe - 2/1/08
