Introduction

These home-made chicken fingers are a delicious treat. Add your favorite seasonings with the flour and substitute the bread crumbs for crushed roasted almonds to twist the recipe!

Number of Servings: 4

Ingredients

    2 Chicken Breasts, cut in strips
    Egg, 1 large
    Milk, 1 tbsp
    Flour, 1 tbsp
    Basil, 1 tbsp
    Pepper, black, 1 tsp
    Ginger, ground, 0.5 tsp
    Bread Crumbs (I love Panko), 0.4 cup
    Coconut, shredded, 0.4 cup

Directions

Preheat oven to 350oF.
Spray non-stick baking sheet with a thin coat of olive oil.
Cut chicken breasts in strips.
In a small plate, mix the flour, basil, pepper and ginger - or your favorite seasonings.
In a small bowl, beat the egg and milk together.
In a second small bowl, mix the bread crumbs and coconut.

Dip each chicken strip in the flour mixture, then the egg and finally the bread crumbs-coconut mix and place on the baking sheet.
Do this until you have covered all chicken strips this way and placed them on the baking sheet.
Put the sheet in the centre of the oven for 10 minutes, turn and cook an additional 5 minutes.

Serve with a large portion of salad and enjoy.
This gives 4 generous portions of chicken fingers.
