Creole Cheese Sauce

Ingredients

    1/4 cup milk
    2 tbsp flour
    1/4 cup shredded cheese (I used a mix of sharp cheddar and Monterey jack)
    1 tbsp dry mustard
    1 tbsp black pepper
    1 tbsp Tony’s Creole seasoning

Directions

Pour the milk into a small saucepan over medium heat. Watch this carefully–you do not want this getting too hot too fast. When the milk is just slightly warm, add the flour, spices, and cheese, and stir to combine. Add more flour as necessary to help the sauce thicken up (this also does some sort of voodoo to help the cheese melt evenly; I’m sure there’s a logical explanation, but doesn’t voodoo sound better?). Alternatively, if I am waaaaaay off on these numbers, add a little bit more milk to loosen things up, but just a little bit at a time. Stir frequently, if not constantly, until cheese is evenly melted and sauce has thickened to desired consistency. Pour sauce over cooked noodles and try not to inhale the deliciousness–this is comfort food and is meant to be savored.

Makes 2-4 servings, depending on how generous you are with your cheese sauce.
