Split Pea Soup

Number of Servings: 8


    1 lb. split peas
    1 onion, chopped or sliced
    3 to 6 carrots, sliced
    2 to 3 stalks celery, or tops from one bunch
    1 bay leaf
    1 clove garlic, minced (pinch of garlic powder)
    dash of cayenne pepper (optional)
    1/4 tsp. thyme
    8 to 10 C. water
    1/2 tsp. salt (optional)

    OPTIONAL (use one)
    2 C chicken sock
    turkey carcass
    ham bone
    leftover ham
    1/4 lb. salt pork or bacon


Put all ingredients in a soup kettle or 5-qt slow-cooker (leave 1 to 1 /2" for boiling room.) Simmer, covered, for 3 to 4 hours. (slow cooker for 8 to 10 hours on low, 3 to 4 on high. About half an hour before serving, remove meat and bones, and put soup through a blender/food processer. Return soup and meat bits to pot; add salt, if desired, and serve hot.
