Hearty Chicken & Vegetable Soup

Introduction

My favorite chicken soup...perfect for cold nights! Simple, and easy, but could be very easily modified to suit your personal tastes. My favorite chicken soup...perfect for cold nights! Simple, and easy, but could be very easily modified to suit your personal tastes.
Number of Servings: 10

Ingredients

    2 tablespoons extra-virgin olive oil
    1 large onion, chopped
    2 cups carrots, diced
    2 cups celery, diced
    3 garlic cloves, crushed
    Coarse salt and freshly ground pepper
    6 cups low-sodium chicken stock
    1 1/2 cups water
    2 Red potatoes, cut into cubes
    3 cups of fresh spinach
    1 can (15 ounces) chickpeas, drained and rinsed
    2 tablespoons fresh lemon juice
    1 whole chicken, roasted and cubed ( I end up using about 3 cups of chicken)

Directions

1. Heat oil in a stockpot over medium-high heat. Cook onion, carrots, celery, and garlic, stirring occasionally. Cook for about 5 minutes or until onions are translucent.

2. Add stock and water, simmer for 5 minutes and then bring to a boil.

3. Add potatoes. Return to a boil. Reduce heat, and simmer, partially covered, until they are tender, about 10-15 minutes. Stir in spinach, chicken and chickpeas, and return to a boil. Stir in lemon juice. Season with salt and pepper.
