Ingredients

2 tbsp olive oil
1 cup onions, chopped
2 medium carrots, sliced
Salt and pepper to taste
1 garlic clove or 1/2 tsp garlic powder
1 butternut squash, cubed
1 lb chicken breast, no skin, cubed
Directions
Add olive oil and onions on medium heat until soft.
Stir occasionally, turn heat on high, then add carrots, garlic, salt and pepper until brown.
Then add squash and chicken.
Turn heat on low and simmer with lid on pan.
Stir occasionally.

Love butternut squash but really did not care for this recipe. I felt like no matter how long I cooked the squash for, it wasn't done, and I was concerned about everything else being over done. I did add some nutmeg, and the onion/garlic/nutmeg/salt/peppe
r combo did make for tasty chicken. - 4/14/08
