Rice Cake Pizzas Fast & Easy

Introduction

Ingredients

    You will Need:
    2 Large Rice Cakes ( I used the the white cheddar) = Pizza Dough
    Can of rotel tomatoes w/green chilis (you can get mild if you do not like spicy) = Sauce
    2/3 cup of lowfat Mozzarella Cheese (you can use fat free if you want but I like some fat LOL)
    Chopped fresh garlic cloves. Any other veggies you like to add on your pizza

Directions

Drain Rotel of it juice using a strainer put the amount you want on it, there are hardly any calories in this stuff 1/2 cup only has 30 (I add some to my salads and it make my dressing go further too). Then add chopped garlic (and any other veggie) then half the cheese on each one. Put this in a toaster oven on broil for just a few minutes and ...wow, wow, wow is all I can say ....My version is only 272 calories, 22 carbs, 10 grams of fat, and 16 grams of protein I think I will make up small ones using the mini rice cakes for party snakes to take when invited out. I can tell you mushrooms, bell pepper would all be good on these the key is dont use real wet tomatoes so drain the rotel well and do not leave them in long.
