Quick Stripped Tortilla Soup

Introduction

Number of Servings: 3

Ingredients

    1 tbsp grapeseed oil,
    1/2 cup frozen diced onions
    2 stalks celery, diced
    1/2 tbsp Chipotle People Chipotle Adobo Sauce
    1/2 tsp cumin
    1/2 tsp chili powder
    1 tsp minced garlic
    2 cups low sodium vegetable broth
    15 oz. can small white beans, rinsed and drained
    15 oz can low sodium diced tomatoes including juices
    lime juice to taste
    1/2 or more avocado
    3 tbsp or so cilantro leaves

Directions

Saute onions and celery in grapeseed oil. Add the adobo sauce, cumin, chili powder, garlic, and rinsed beans. Heat through. Add broth and tomatoes and simmer for 10 minutes.

Cube the avocado. Divide the soup into bowls and top with avocado and cilantro. Season with lime to taste.

Makes 3 1 1/2 cup servings.
