Lemon Glazed Chicken with Mushrooms

Ingredients

    4 (6 oz) skinless, boneless chicken breast halves
    1/2 tsp kosher salt
    1/4 tsp freshly ground black pepper
    3 Tbls fresh lemon juice, divided
    Cooking Spray
    1 (8oz) pkg sliced fresh mushrooms
    2 garlic cloves, minced
    1/2 cup fat-free, less-sodium chicken broth
    2 Tbls chopped fresh flat-leaf parsley
    1 Tbls drained capers

Directions

1. Sprinkle chicken with salt and pepper; drizzle with 2 Tbls lemon juice.
2. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add chicken; cook 6 minutes on each side until chicken is done. Remove chicken from pan; keep warm.
3. Add mushrooms and garlic to pan; saute 3 minutes or until mushrooms are tender. Add remaining 1 Tbls lemon juice, chicken broth, parsley, and capers. Return chicken to pan. Cook, uncovered 2-3 minutes or until heated through.

Yield: 4 servings (1 chicken breast and 1/4 cup sauce)
