1/2 c black beans 1 tbsp onions, chopped 1 clove garlic, chopped Dash chili powder dash cumin 1/2 c eggs whites or substitute 1/4 c part-skim mozzarella 2 TBSP salsa 1 TBSP Fresh Cilantro, chopped
Heat a skillet over med-high heat. Coat with non-stick spray. Saute beans, onions, and garlic until fragrant. Add chili powder and cumin, cook for 1 minute more. Remove to a bowl. Re-coat pan with spray. Cook egg whites over med-high until done. Add bean mixture back to pan and sprinkle with cheese and toss to mix well. Serve topped with salsa and fresh chopped cilantro.
