Vegatble Lentil Stew

Number of Servings: 6

Ingredients

    2 tbsp olive oil
    1 med onion, chopped
    3 cloves garlic, minced
    1 cup lentils
    6 1/2 cups broth or 6 cups broth and 1/2 cup dry red wine or beer
    28oz crushed tomatoes
    2 medium potatoes, chopped
    2 medium carrots, chopped
    1 parsnip, peeled and chopped
    1 rib celery, chopped
    3 cups shredded cabbage
    1tsp salt
    1/2 tsp pepper
    1/2 tsp thyme
    1 tsp savory
    1/2 tsp smoked paprika
    1/2 tsp ground fennel seed

Directions

Sautee onion and garlic in oil until onion is soft
Add herbs, stock, and lentils and bring to a boil
Reduce heat and simmer for 10 min
add all remaining ingredients except cabbage and simmer for 20 min
add cabbage and simmer for another 20 min or until lentils and vegetables are tender
serve hot.
