Lemon Garlic Chicken with VegetablesSubmitted by: DANYMAN
4 chicken breasts, skinned, boneless
2 tbsp olive oil
3 tbsp lemon juice
2 tbsp water
2 tsp chicken bouillon powder
3 cloves garlic
3 medium potatoes, cut length-wise & in half
1 cup each - green pepper, red pepper & zucchini, cut into thin strips
grated Parmesan cheese
In a large skillet, brown chicken in oil,
Add lemon juice, water, bouillon and garlic; bring to a boil.
Add potatoes; reduce heat; cover and simmer 10-15 minutes until potatoes start to become tender.
Add peppers and zucchini; cover & cook 5-10 minutes or until vegetables are tender.
Top with sprinkle of Parmesan cheese
