Ingredients

    6 small zucchini ( sliced)
    1 C mushrooms (sliced)
    1 C Reduced Fat Cheddar Cheese (grated)
    1 Can 97% fat free Cream of Mushroom soup
    1 C seasoned croutons
    1 pt. fat free sour cream

Directions

Boil zucchini til tender with a touch of salt. Spray pan with cooking spray and brown mushrooms. Mix in mushroom soup. Gradually mix in cheese. Stir til cheese melts. Add sour cream and croutons. Gently mix with zucchini.
Bake 20 mins. @350
