Mexican style meatloaf - mild

Introduction

Mexican style meatloaf without the jalepenos. Mexican style meatloaf without the jalepenos.
Number of Servings: 9

Ingredients

    1.5 lbs lean ground beef
    2.5 c chopped onion
    3 eggs
    2 red peppers, roasted and peeled
    1 cup bread crumbs
    1 can green beans (398 mL=1.67 c)
    1 can corn (341mL, 12 fl oz, 1.4 c)
    1 can kidney beans (540 ML = 2.16 c) - rinsed
    1 cup tomatoes (homemade - boiled & strained, very little sugar or salt added)
    1 pkg mushrooms (227 g)
    spiced with tobasco, paprika, oregano, Mrs. Dash original, hot pepper flakes

Directions

Makes 9 servings.
Preheat oven to 350.
Roast and peel the red peppers.
Saute onion.
Mix together in a large bowl: beef, eggs, bread crumbs, spices.
Divide beef mixture into 3 sections (1/2 # beef each).
On 3 separate pieces of wax paper, flatten each beef section into a 7" x 4" slab.
Place red peppers down the middle of each slab, then some saute onion (about 1/3 c each).
Roll the sides of the beef over the peppers and onion to make a tube.
Spray a 9"x11" baking dish with vegetable spray.
Place each tube across the dish.
Bake 1 hour.
Add corn, green beans and kidney beans to the onion, then add the tomato sauce and your choice of spices/flavourings. Let simmer to thicken.
When the meatloaves have baked an hour, scoop the vegetables on top of them and return to ove about 10 minutes.
Cut each log into 3 pieces to serve.
