Quick Easy Broccoli Cheese Soup- Semi Homemade.. ha!

Introduction

Tasty warm broccoli and cheese delight with painless cooking! Tasty warm broccoli and cheese delight with painless cooking!
Number of Servings: 3

Ingredients

    1 Can of Campbell's 98% Fat Free Broccoli Cheese Soup
    1.5 Cups of 1% Milk
    1 Large stalk of Broccoli (or more if you choose)
    4 Large baby Carrots
    1/4 cup chopped raw Onion
    1 tbsp I Can't Believe It's Not Butter Spread

Directions

Add a small amount of water to the bottom of a pot- about half an inch. Add cut up broccoli and allow to cook up a bit until broccoli becomes tender.

While the broccoli is cooking, shred the baby carrots and chop up onion.

Move the cooked broccoli to a strainer to allow excess water to run off and for broccoli to cool off a bit for chopping.

Add the butter and onion back into the pan and allow to simmer together, then add shredded carrots and a little water to help carrots steam up and cook.

The cool broccoli can now be chopped up into more soup size pieces and add it the pan.

Open can of soup and add with veggies, including 1.5 cups of milk- the directions on the soup can call for only a cup- but add the extra cup to make a better consistency for the extra veggies.

Mix well- bring to a boil return to simmer awhile.

Serve and enjoy!
