Introduction

Variation on Pasta e Fagioli Variation on Pasta e Fagioli
Number of Servings: 4

Ingredients

    1 bag/box ww pasta of your choice
    4 roma tomatoes, chopped
    2 medium zucchini, sliced in circles, then halved
    1 tsp olive oil
    1.5 tsp garlic
    1 tsp thyme
    1 tsp oregano
    1 tsp salt
    1/2 c white wine
    1/2 can any type of white beans (you can use a whole can if you want some more protein)
    Lemon juice to taste (about 1-2 tsp)

Directions

In a large pan, heat olive oil with garlic and thyme. Add sliced zucchini and oregano and let cook for about 5 minutes. Add chopped roma tomatoes, white wine, beans, and salt. Stir and let simmer until the tomatoes are a bit broken down and the liquid begins to thicken. Squeez in a bit of lemon juice at the end and cook for a few more minutes. Toss with one bag/box of cooked pasta (any shape- I used gemiti/pipe rigati), sprinkle with vegan parmesan and enjoy!

NOTE: I eat 1 1/2 cups of cooked pasta for a serving, and that's how I calculated out the nutrition info for the recipe. If you want to have 1 cup servings of pasta, this recipe will make 6 servings.
