1 Block of Extra Firm Tofu
1/2 cup apple cider vinegar
1/2 cup light soy sauce/tamari/Braggs Liquid Aminos
1/4 cup water
1.5 tbsp olive oil
2 tsp ground coriander
4 tsp garlic powder
Combine the remaining ingredients in a bowl, then pour over the tofu cubes. Marinate for 1 hour. Store the extra in a sealed container in the fridge for up to 5 days.
Note: The sodium for this dish is incorrect. As it is a marinade, you aren't actually consuming all the sodium. I don't know how to calculate for the difference. If you know how, please let me know.
