Cauliflower / Zucchini Puree

Introduction

I use this in Macaroni & Cheese (either homemade or boxed) to add nutrients (this recipe is taken from "The Sneaky Chef" cookbook written by Missy Chase Lupine I use this in Macaroni & Cheese (either homemade or boxed) to add nutrients (this recipe is taken from "The Sneaky Chef" cookbook written by Missy Chase Lupine
Number of Servings: 4

Ingredients

    1 Medium Zucchini (or 2 small) Peeled and roughly chopped
    2 Cups Cauliflower cut into florets
    1 teaspoon fresh lemon juice
    3-4 TBSP water

Directions

Steam cauliflower i steam over 2 inchesof water for about 10-12 minutes
Place the Zucchini and lemon juice in a food processor and pulse. Drain the Cauliflower and add it plus half the water to Zucchini and puree until smooth. If not smooth enough, add additional water.

Makes about 2 cups of Puree.
