Introduction

Turkey Bacon, Baby Spinach, and Grape Tomatoes give the comfort food feel of a Bacon, Lettuce, and Tomato sandwich to this easy to make quiche. Mushrooms and Cheeses blend to give it a lush, hearty feel. Light sour cream is substituted for the usual mayo. Ingredients

    1 Deep dish pie crust, frozen
    4 eggs, beaten
    .50 C light sour cream
    .50 C. 2% milk
    1 tsp. cornstarch
    1 C. baby spinach chopped
    1 C fresh mushrooms, chopped
    1 C colby/monterrey jack shredded cheese
    .50 C chedder cheese, shredded
    6 grape tomatoes, chopped
    8 slices louis rich turkey bacon, cooked and chopped
    dash of pepper
    1 tsp Tony Chachere's Creole Seasoning (optional)

Directions

Preheat oven to 350 degrees F.
Beat eggs and mix in sour cream, milk, and cornstarch. Mix until well blended. Add in all other ingredients and mix well. Pour into pie crust and bake on a cookie sheet for 50 mins/until center is set and knife inserted comes out clean. Allow to set for a few minutes and serve.
Makes 6-8 servings depending on how you slice it. Nutritional information is based on 6 servings.
