Ingredients

1 Deep Dish 9" pie crust
3 Large Eggs, Beaten
1/2 C. 2% Milk
1/2 C. Light Sour Cream
1 tsp. Cornstarch
1 C. Colby and Monterrey Jack Cheese, shredded
1/2 LB. Imitation Crab Meat
1 C. Coarsely Chopped Baby Spinach
3/4 C. Coarsely Chopped Mushroom Slices
Pinch of Black Pepper.
Directions
Preheat oven to 350 degrees F
In a medium bowl, combine the eggs, milk, sour cream and cornstarch. Stir in the cheese, imitation crabmeat, spinach, mushrooms, and pepper. Pour into the pie shell.
Bake at 350 degrees F for 45 to 55 minutes or until a knife inserted in the center comes out clean. Let cool slightly and serve. Excellent with fresh fruit on the side!
