Mucho Nacho - low carb / high protein

Introduction

High protein nacho casserole. Recomend serving it in a salad or in lettuce scoops.

Can be rolled in a soft shell, hard shell, with chips, etc.

Number of Servings: 10

Ingredients

    1 large onion
    3 green onions
    1 large pepper (red or green)
    12 small cherry tomatoes
    2 cans (540 ml) black beans
    1 pkg extra lean bison (.394 kg)
    1 pkg extra lean ground beef (.378 kg)
    1 c light/fat reduced cheese (you can also substitute cottage cheese!)
    1 can stewed tomatoes (398 ml)
    2 pkg Taco Seasonsing

Directions

Makes 10 servings (about 1 c each)

1/ Throw 2 cans black beans in blended (if you drain them, add .5 c water) blend till semi chunky.

2/ Chop onion and pepper into small chuncks. Toss in frypan. Add Bison and Lean ground beef. Stir till throoughly cooked and crumbled.

3 / Add bean mixture, taco seasoning and can of stewed tomatoes. Mix. Looks nasty, but trust the process...

4/ Place mixture in an oblong pan (9 x3 ? - whatever works)...sprinke grated cheese, green onions, cherry peppers on top.

5/ Bake 300 in oven for 20 min.

**To keep low carb use lettuce scoops instead of chips/tortillas.

***May substitute 1 c cottage cheese instead of cheddar and mix it right in the pan.

- Serve with hot and spicy salsa. mmmmmmmmmmm
