Cucumber Salad

Introduction

Just a try out recipe, wanted to do something with some cucumbers and other left overs I had in the fridge. Just a try out recipe, wanted to do something with some cucumbers and other left overs I had in the fridge.
Number of Servings: 4

Ingredients

    Cucumbers ( 2 small peeled and chopped, about 6" long)
    Onion (Raw, Chopped, 1/4 cup)
    Sweet Red Bell Pepper (Raw, Chopped, 1/4 cup)
    Tomatoes (2 Plum, Chopped)
    Dash of Lemon Juice (1 tblsp)

Directions

After all ingedients are chopped, mix all together and serve as a side dish or to dress up your lettuce salad.
Sprinkle a dash of lemon juice over the serving as required.

Makes approx 4, 1/2 cup servings.

Add Some dressing if you like but do not forget to recalculate your calories etc.
