Mexican Slaw

Introduction

This is a colorful summer salad great for a barbecue. The addition of red chili pepper flakes gives it a nice kick. I love to serve this with a couple slices of grilled marinated flank steak, wrapped in La Tortilla Factory's Low Carb/High Fiber Tortilla. Yum!

Ingredients

    1 bag (12 oz.) Trader Joe's Organic Broccoli Slaw mix
    4 plum tomatoes, cored, seeds and pulp removed, then diced
    1 red onion, quartered and thinly sliced
    1 mango, peeled, cored, and diced
    1 bunch of cilantro, roughly chopped
    2/3 cup Trader Joe's cilantro salad dressing
    1/3 cup Ken's Steakhouse Lite Vidalia Onion salad dressing
    1 tsp red chili pepper flakes

Directions

Mix all ingredients together in a large bowl. Cover and chill for at least 2 hours before serving.
