Citrus Whole Wheat and Oatmeal Cookies

Introduction

These are just as good made with a diabetic friendly butter replacement and replacing 1/2 the sugar with your favorite sugar replacement.


I didn't have agave nectar like I used last time, so I used pinneapple juice. They're tasty, but I think I liked them a bit better with just the orange without the pinneapple flavor added. So if you use a quarter cup agave nectar instead of the pinneapple that is a delicious recipe as well. I make my own pear sauce by blending 1 can of pears with 1/2 the pear juice from the can. Save the leftover pear juice for sugar replacement in other recipes

Ingredients

    *Whole Wheat Flour, 1 cup (remove)
    Wheat germ, crude, .25 cup (remove)
    *Quaker Oats 100% Natural Whole Grain oatmeal, 1 cup (remove)
    Baking Soda, 1 tsp (remove)
    Baking Powder, .25 tsp (remove)
    Salt, .25 tsp (remove)
    Butter, unsalted, .5 cup (remove)
    Pineapple Juice, .5 cup (remove)
    Orange Juice, .25 cup (remove)
    *Orange peel or rind or zest_1 tsp, 1 tsp (remove)
    *Chia (Salba) Seed 1T=12g Gluten Free GF, 12 gram (remove)
    Hershey's Special Dark Chocolate Chips, 8 tbsp (remove)
    *NoName Pear Sauce, 0.5 cup (remove)
    Brown Sugar, .5 cup, packed (remove)

Directions

Preheat oven to 350 degrees

Cream 1/2 cup butter (or butter supplement) and 1/2 cup packed brown sugar in a small bowl

Mix 1 cup whole wheat flour, 1 cup whole oats, 1/4 cup wheat germ, 1 tsp baking soda, 1/4 tsp baking powder, 1/4 tsp salt

Mix 1/2 cup pineapple juice, 1/2 cup pear sauce, 1 tabelspoon chia seeds, the juice of 1 orange, and the grated rind of 1 orange

Blend the 3 bowls of ingrediants together and add 1/2 cup of dark chocolate chips (I find I need less chocolate chips when they're dark chocolate so that it doesn't overwhelm the citrus flavor, and it adds less sugar and fat to the recipe but add as many as you like if you're just going for a chocolaty flavor)

spoon onto 2 cookie sheets and bake at 350 degrees for 10 minutes
