Spinach Lasagna

Number of Servings: 6

Ingredients

    1 lb. ground chuck
    1/2 cup chopped onion
    1 cup tomato sauce
    1 tsp dried basil
    4 oz. shredded mozzarella cheese, whole milk
    1/4 tsp. oregano
    1 tsp. garlic, minced
    1 8 oz. can mushrooms
    1/4 tsp. ground black pepper
    10 oz. frozen chopped spinach, thawed and squeezed dry
    1 cup 2% cottage cheese

Directions

Saute ground beef and onion until onion is translucent. Add tomato sauce, basil, parsley, oregano, garlic, salt, pepper and mushrooms. Combine spinach with cottage cheese in separate bowl. Cut mozzarella cheese into thin strips. In 7x11 baking dish, layer meat mixture with cheese and spinach mixture. Top with mozzarella strips. Bake at 375 for 20 minutes.
Makes 6 generous servings.
