Scrambled eggs whites, Kale and other veggies

Introduction

The Kale adds volume so I would not need to reach for the bread! The Kale adds volume so I would not need to reach for the bread!
Number of Servings: 1

Ingredients

    Extra Virgin Olive Oil, 0.5 tbsp
    Onions, 1/4 medium size
    Garlic, 2 cloves minced or chopped
    Thyme, a dash of fresh or dry
    Chopped tomatoes, 1 cup
    Corn, 1/3 cup
    kale, 3 cups
    Egg whites- 2

Directions

With medium heat, saute chopped or minced garlic, chopped onions and a dash of thyme in a non-stick frying pan for 3 minutes. For even more low-fat, use an oil spray. Add chopped onions and corn, salt and pepper to taste- saute for 5 minutes.

Add kale and saute for about 2 minutes. Add whisked egg whites and scramble till done. Add more salt and peps to your taste. Enjoy
