Introduction

Number of Servings: 4

Ingredients


    For the grits:
    1 cup stone ground grits (not instant)
    4 cups chicken broth
    1 Tablespoon Butter
    1/4 cup half and half

    For the Shrimp:
    1 link Chicken Andouille Sausage sliced into rings
    4 oz Country Ham julienned
    1 lb raw shrimp peeled
    1 Tablespoon Butter
    1 can whole tomatoes
    2 cloves garlic minced
    1/4 cup scallions cut into rings
    1/4 tsp Cajun Seasonig

Directions

Grits Instructions:
Bring broth to a boil and whisk in polenta. Cook over low heat until thickened, approximately 30 minutes. Add 1/4 cup half and half and 1 TBLSP Butter.

Shrimp Instructions:
Spray nonstick pan with nonstick spray. Saute ham and sausage approximately 3 minutes.Add 1 tblsp butter to pan and add shrmp, Saute until shrimp changes color, about 4 minutes. Add garlic, saute about 1 minute, then add cajun seasoning and can of tomatoes. Break up tomatoes as you saute. Saute until mixture thickens. Salt and pepper to taste, serve over grits.
