Tortilla soup

Tortilla soup

Number of Servings: 10

Ingredients

    Vegetable or Chicken broth
    Onion, diced
    Zucchini, diced
    Soy Chorizo
    Canned Black Beans, drained
    Frozen Sweet corn, thawed
    Canned Diced Tomatoes (fire-roasted, optional)

    Top with extra:
    Crushed tortilla chips, fresh , lime, sour cream (or plain greek yogurt), avocado, cheese (optional)

Directions

Saute onion in olive oil in bottom of pan, add zucchini and stir another minute. Add broth, soy chorizo, beans, corn and diced tomatoes. Bring to a simmer for 15-20 mins. Top with plenty of extras.
