This recipe will soothe your craving for cool, creamy coleslaw on a summer day, or any day! Rich tasting, but vegan, lo-cal, and so easy to make. Ingredients

    1 pkg. Dole Coleslaw Mix
    5 & 1/3 tbsp. (1/3 cup) Spectrum Canola Vegan Mayo
    3 tbsp. white vinegar
    1 tbsp. white sugar
    1/2 tsp. dried dill
    1/2 tsp. dried parsley

Directions

Combine all dressing ingredients; toss with coleslaw, and chill at least a couple hours. Serve with a dash of freshly ground black pepper and sea salt. Makes 4.5 servings.
