Tabbouleh with Edamame and Feta

Introduction

Number of Servings: 5

Ingredients

    1 1/4 cups uncooked bulgur or cracked wheat
    2 cups boiling water
    2 cups cooked edamame
    1/4 cup prepared pesto
    2 cups cherry tomatoes, halved
    3/4 cup crumbled feta cheese
    1/3 cup thinly sliced green onions
    2 tbsp minced fresh parsley
    1/4 tsp freshly ground black pepper
    4 pita breads, cut in half

Directions

1. In bowl, combine bulgur and boiling water. Cover, let stand for 30 minutes.

2. In bowl, whisk together pesto and lemon juice.

3. In a bowl, combine bulgur, edamame, tomatoes, feta, green onions, parsley and pepper; toss gently to combine. Drizzle with pesto mixture and stir to coat well. Serve with pita.

Makes 5 approximately 1.75 cup servings
