1 1/2 cups whole wheat flour
1 teaspoon baking soda
.25 cup Promise Fat Free Margarine
.5 cup Splenda Cooking Blend
.25 cup brown sugar, packed
.25 cup liquid egg substitute
1 teaspoon vanilla extract
2 cups Kashi crisp rice cereal
1 cup Nestle Chocolatier Premium Baking Dark Chocolate (53%) Chunks
2. In large mixing bowl, beat together margarine and sugar until light and fluffy. Add egg substitute and vanilla. Beat well. Add flour mixture, mixing until combined. Stir in cereal and chocolate chips .
3. Drop by level tablespoons onto cookie sheets coated with vegetable spray.
4. Bake at 350 degrees F (175 degrees C) about 12 minutes or until lightly browned. Remove immediately from cookie sheets and cool on wire racks. Store in airtight container.
Note: Raisins go great in this cookie, though they are not included in the nutritional content.
Yields 3.5 dozen cookies!
