Quick and Easy Turkey Chili

Ingredients

1 Medium Onion, chopped
1 T Vegetable Oil
2 Cloves Garlic, chopped
1 lb Ground Turkey (93%)
1 1/2 T Chili Powder
2 tsp Ground Cumin
3 T Tomato Paste
1 can Diced Tomatoes (28oz)
1 can Kidney Beans (16oz)
2 C Chicken Broth (low sodium)
1 1/2 tsp Salt
1/2 tsp Pepper
1/4 C Fresh Cilantro, chopped
Optional: Fat Free Sour Cream (garnish)
Directions
1. Saute chopped onion in vegetable oil over medium high heat until tender. Add chopped garlic and saute 1 minute.
2. Add turkey, chili powder, and cumin and cook stirring often, 8 minutes or until meat crumbles and is no longer pink.
3. Stir in tomato paste and cook 2 minutes. Add tomatoes, kidney beans, chicken broth, salt, and pepper.
4. Bring mixture to boil, cover and reduce heat to low Simmer, stirring occassionally for 30 minutes.
5. Stir in cilantro. Garnish with sour cream if desired.
