Introduction

Ingredients

    2 cups all purpose flour
    1/2 tsp baking powder
    1 1/2 tsp baking soda
    1/4 tsp cinnamon
    1/8 tsp nutmeg

    5 bananas, smashed
    2 eggs
    1/2 cup white sugar
    1/2 cup splenda for baking
    1/4 cup oil or melted butter
    1/4 cup applesauce

    Optional:
    1/4 cup chopped walnuts or pecans

Directions

Preheat oven to 350. Butter bottom and sides of loaf pan.

Mix bananas, sugars, oil, applesauce and eggs until blended. In a separate bowl mix the remaining ingredients except nuts (optional). Add wet mixture to dry, mix until just blended. Fold in nuts.

Pour into pan and bake for 45-55 minutes, test for doneness before removing from oven.
