Ingredients

    * Egg Creations Southwestern (1/4c), 4 serving
    * Milk, nonfat, 0.5 cup
    * Zucchini, baby, 2 medium
    * *Red Bell Pepper (1 medium raw), 3 serving
    * Parmesan Cheese, shredded, 2 tbsp
    * Salsa, 0.5 cup
    * Garlic, 2 tsp
    * Olive Oil, 1 1tsp

Directions

Chop veggies into bite-sized pieces. Mix the milk and Egg Creations in a bowl and set aside. In a non-stick pan, sauté the veggies in olive oil. Add the garlic.

When they're tender-crisp, flatten them out and pour the egg-milk mixture over them. Do not stir! Turn off the burner and let the bottom of the pan firm up a little.

Sprinkle the cheese over the top.

Turn the oven on the 450F and pop the pan in. Don't worry of the broiler element is lit up - this will brown up the top nicely. Leave in the over for about 5-10 mins, or until set and lightly browned. This recipe makes very generous portions for 2!!! Ideal for the hungry athlete!

Addendum: I have added goat cheese, varied the veggies, used cheddar instead of parmesan and added all manner of herbs and spices. This is a very versatile fill-me-up food!
