Ingredients

    3T olive oil
    12 oz cooked sausage (keilbasa etc.I used turkey andouille) cut in 1" pieces
    1 onoin chopped
    1 lb baby bella mushrooms sliced
    3 cloves garlic pressed
    2 tsp thyme
    1 lb lentils rinsed
    2 bay leaves
    10 oz baby spinach
    6 cups chicken broth

Directions

makes 6 servings

heat oil in large pot. Brown sausage about 5 min per side
remove with slotted spoon to plate
add mushrooms and onions to pot with a little salt and cook until softened about 7 min
Add garlic and thyme cook 1 min
add lentils and bay leaves stir
add chicken broth.
cook with cover slightly ajar for about 18 min until lentils are cooked.
return sausage to pot and add spinach in 2 batches to wilt.
season with salt and pepper
