Albondigas Soup

Introduction

Mexican Meatball Soup Mexican Meatball Soup
Number of Servings: 8

Ingredients

    1 cup yellow onion
    1 clove of garlic
    2 tblspn Olive oil
    5 tblspn ground cumin
    2 tblspn chili powder
    1 can of petite cut tomotes

    Meatballs
    1 pound ground beef 97/3
    1 egg
    1/2 cup chopped cilantro
    1/2 cup panko bread crumbs
    1/2 cup minute rice uncooked
    1/2 tspn oregano
    1 tspn garlic powder
    salt and pepper to taste
    Make into 1.5 inch meatballs

    2 Zucchini's sliced
    2 Carrots chopped
    2 celery chopped

    1 quart of beef broth
    salt, pepper, and more cumin to taste at the end
    garnish with lime juice and cilantro


Directions

serving size 2 meatballs and 1.5 cup of soup
In large pot heat oil and brown onion and garlic with salt and pepper. Add Cumin and chili powder stir add broth and tomatoes and bring to boil. In a bowl add all ingredients for Meatballs mix well and make into 1.5 inch meatballs add to boiling pot. Boil for 10 minutes add chopped veggies cover and boil for 2 hours or until carrots are soft. If needed add more Cumin, Salt and pepper. Add 1 cup of minute rice, turn off heat and stir. let sit 10 minutes and serve. Garnish with a lime squeeze and fresh cilantro.
