Baked Chicken Flautas

Introduction

Super good, economical and healthy recipe. We found it in one of those supermarket checkstand magazines. This makes numerous meals for us for under $10 on the initial investment. Can't beat that! We only use rotisserie chicken out of convenience. You will save a lot of sodium and calories by using just boneless skinless meat, but rotisserie is just so easy! Ingredients

    1 shredded rotisserie chicken, about 2-3 cups, discard skin and bones.
    1/2 cup chopped onion
    3 cloves garlic
    1/4 cup chopped cilantro
    1 cup 2% shredded mexican cheese
    1/2 cup Newman's Own black bean and corn salsa
    1- 15oz. can Black beans, drained and rinsed.

    Mission 8" Flour tortillas

Directions

separate chicken (discard bones and skin)
heat 1 Tbl olive oil and brown garlic and onion.
Add beans, chicken, cilantro, 1/2 cup of salsa and stir until well blended. Add shredded cheese.
Using olive oil spray or butter spray, spray one side of flour tortilla and flip it over and fill with about 1/3 cup of filling. Roll up flauta and place on baking sheet. Bake 425 for about 15-20 minutes until the tortilla looks browned adequately.
Makes about 10 flautas.
