Introduction

Carrot pudding with Indian spices, for my logging purposes Carrot pudding with Indian spices, for my logging purposes
Number of Servings: 4

Ingredients

    6 carrots
    3 c 2% milk
    8 cardamom pods
    1/4 c ghee
    1/4 c sugar
    2 T raisins
    1 T pistachio nuts

Directions

Grate carrots. Put carrots, milk & cardamom pods into heavy pot. Boil, then cook, stirring, until milk has evaporated.
In separate pan, heat up ghee. Fry cooked carrot mixture until slightly darkened. Add sugar, raisins & pistachios, cook 2 minutes.
Makes 4 large servings
