Baked potato with curried Chickpeas and Cheddar cheese

Number of Servings: 4


    Goya organic chick peas, 2 cup
    Onions, raw, .5 cup, chopped
    Contadina Tomato paste, 5 tbsp
    *Cumin seed, 1.5 tbsp
    *Coriander powder, 1 tsp
    Turmeric, ground, .5 tsp
    Chili powder, 1 tsp (use paprika if you can't handle spicy taste)
    Water, 1 cup (8 fl oz)
    *Hot Chili Peppers, 1 pepper
    Cilantro, raw, 4 tbsp
    Olive Oil, 2 tbsp
    *Baked Potato, with skin, 1 medium (2-1/4" to 3-1/4" dia.)
    *Cabot 75% Light Vermont Cheddar (1oz), 4 oz
    Salt, 1 dash


Stick the potatoes in the microwave oven following instructions or use reserved pre-baked potatoes. Heat olive oil in a 3 qt. pot, add chopped onions and fry till golden brown. In a pan, fry cumin seeds till popped and fragrant. Drop in a motrar and pestle and grind coarsely. Add chili powder, coriander powder in the pot and fry. Stir in tomato paste and fry stirring. Add the water stir again till blended. Drop the canned chick peas, water and all. Stir till blended, cover tight and bring to a boil. Drop the green chilli and salt to taste ( do not make it too salty since cheese will also have salt) pepper chopped fine, remove seeds if you want it mild, and cook covered for about 5 minutes. Garnish with cilantro. Split baked whole potato in two, drop 1/2 a cup of curried chick peas over and top with shredded 1 oz Cabot 75% fat free cheddar cheese and zap for one minute. Serve hot topped with more cilantro as garnish.
