1/2 Cup, Cracked and Opened Pistachio Nuts. Instead of the original Miniature Marshmallows.
20 ounce can, drained; Pineapple Chunks. Or 2 Cups Fresh Pineapple.
1 Medium Sliced or Diced, Banana.
11 ounce can, drained; Mandarin Oranges.
1/2 Cup, Dannon Light & Fit Vanilla or Strawberry Non-Fat Yogurt.
1/4 Cup,Toasted Coconut Flakes.
1/2 Cup, Sliced fresh Strawberries; if using the Vanilla Style yogurt
Toast your Coconut on a Cookie Sheet in a single layer on a heavy baking sheet, and bake at 350° for as little as two minutes for flaked coconut, checking often so as not to burn it. Remove from the oven when toasted a golden brown or to your taste. Place on stove top to cool before adding to the other ingredients.
Now, measure your Pistachios needed and crack and open them; removing any still attached fibers and add to the fruit ingredients bowl. I like to take mine and place them into a Sandwich size Ziploc Bag and give them a smack or two with a Meat Mallet to make them a little smaller to chew and to spread their flavor more evenly throughout the recipe. Careful! not to pound to hard or you may end up with bits of Ziploc in your recipe!
Give all the ingredients a gentle mix and let chill for 15 minutes or longer. This is usually easy to keep in refrigerator for 3-5 days in an air tight container. Enjoy!
