Sticky Marmalade Chicken

Number of Servings: 4

Ingredients

    4 boneless skinless chicken breasts
    4 tbsp orange marmalade
    1 tsp fresh thyme leaves
    1.25 cup chicken stock (homemade is best, but low-sodium canned works well too)
    2 tbsp olive oil
    salt and pepper to taste

Directions

Prepare chicken by salting & Peppering both sides, to taste.
Heat pan( large enough for 4 breasts, and deep enough to hold chicken plus stock) over medium-high heat.
Add olive oil
Add chicken breasts, and cook 4-5 minutes on each side, or until golden brown.
Add marmalade, thyme and chicken stock to pan.
Turn heat to med-low.
Simmer chicken breasts in sauce for 5 minutes, or until chicken breasts are fully cooked.
Remove breasts from pan, and keep warm.
Turn heat up to med-high and boil sauce until it reduces and becomes thicker and more syrupy.
Serve chicken with 1/4 of the sauce poured over each breast.
