IntroductionA mushroom casserole that has been passed around on health blogs, but with some of my substitutions. A mushroom casserole that has been passed around on health blogs, but with some of my substitutions.
2 cups broccolini or broccoli
3/4 cup nonfat milk
2 servings of Laughing Cow Mini Babybel Mild Cheddar
1.5 cups Pacific Natural Foods Organic Mushroom Broth (or other mushroom broth)
2 cups Brown Rice
1.75 cups white navy beans
0.5 cups diced or sliced Mushrooms (may also substitue onions)
0.25 cup liquid Egg substitute (or 1 egg)
*You may also add about a Tbsp of sliced almonds to each serving to add crunch.
