2 oz shredded low fat cheddar
2 weight watchers whole wheat tortilla wraps
2 large eggs
Cooking Spray - Canola Oil
2 Tablespoons salsa
2 Tablespoons greek style plain yogurt
1 tsp chopped cilantro
1/4 cup chopped red bell pepper
1/4 cup chopped onion
Heat pan to medium, spray pan with cooking spray.
Add onion, red pepper and cook until soft
Beat eggs and add to pan. Stirring until cooked. Remove from heat
Place 1 tortilla on a plate, spread 1/2 the yogurt and 1/2 the salsa on the tortilla, add eggs in a strip down the middle. Top with cheese and cilantro. Roll up and enjoy!
