Ingredients

Ingredients:
1 small onion, chopped finely
1 stalk celery, chopped finely
1 small carrot, chopped finely
2 oz pancetta or bacon
300g lean ground beef
1 ½ tsp flour
½ c. cooking sherry
Salt & freshly ground black pepper
Pinch nutmeg
½ c. low sodium beef stock
½ c. milk
Whole wheat spaghetti
Directions
Makes six servings of sauce and spaghetti
Instructions:
• • In a large pot, gently sauté bacon, onion, celery, carrot for 8-10 minutes
• • Add ground beef, increase heat slightly and cook until golden brown. Sprinkle in flour, stir and cook 30 seconds then add sherry and nutmeg. Stir over high heat until most of the liquid is reduced.
• • Add ½ the stock, simmer over low heat covered for 1 ½ hours. Stir occasionally, adding the remaining broth as needed. After 1 hour, add the milk and adjust seasonings.
• • Cook the spaghetti and serve with sauce and a salad
