Introduction

Made these to day, next time I will try with apples and cinnamon,the pear taste is a bit too mild for me.
overall a good snack at 126 calories.

Ingredients

    2 ripe pears peeled and thinly sliced and cut across .
    3 eggs
    5 oz granulated sugar
    5 oz vanilla yogurt (low fat)
    3 Tbsp butter ,Melted
    4.5 - 5 oz spelt flour
    7 oz flour
    2 tsp. baking powder
    1 Tbsp vanilla sugar( powdered sugar w/vanilla flavor)
    or you can use reg.powdered sugas and .25 tsp vanilla.
    3 Tbsp ground almond paste /marzipan

Directions

makes 15 muffins.
heat oven to 395 degrees.
Peel and slice pears.cut crosswise.
blend eggs and sugar untill whitish and foamy,add the yogurt and melted butter.Stir softly.
in another bowl, mix the flours, baking powder and almind paste (grated)mix well, add to the egg mixture,fold in carefully and make sure you have a lumpfree batter.
Alternate the batter with the pears in muffin forms,
(this will be heavy so use papers in an muffin pan)
bake in oven for 15 - 20 minutes or until done.
