Mennonite Borscht (tomato base)

Ingredients

    5 quarts homemade chicken stock (see instructions on how to prepare stock)
    1 medium head cabbage, shredded (1 kg)
    6 carrots, sliced (350 gm)
    2 onions, diced (325 gm)
    2 stalks celery, sliced (100 gm)
    Cooked chicken, 300 gm white meat, 200 gm dark meat
    4 - 398 ml cans tomato sauce
    1 Tbsp fresh dill, chopped
    1 Tbsp peppercorns
    2 bay leaves
    salt & pepper to taste

Directions

Stock: To make your own stock, fill a large pot with cold water. Add a mid-size frying chicken. Place on stovetop and bring to a boil. Simmer until chicken is well done.
Remove chicken, and measure out stock so you have 5 quarts. (I don't add any other ingredients when I make this stock since I'm adding veggies to the soup.)

Add all other ingredients to stock. Allow chicken to cool. Remove skin and bones and chop meat finely. Add back to soup pot. Allow to simmer until vegetables are tender.

Based on this recipe, it should yield 32 cups (8 quarts). Nutritional info is based on one cup of soup.

We like to add a little sour cream of half & half to make the soup a little creamier.
