Introduction

I think this meal took me about 20 minutes to make. There is a ton of salsa left which is great for mixing with rice.

Ingredients

    1 Tbsp Olive Oil
    1 medium red onion, chopped
    3 cloves garlic, minced
    16 oz fish (or chicken)
    2 mangoes chopped
    1 Tbsp dried oregano


Directions

Heat olive oil in a large frying pan and cook onion and garlic until softened. Add fish, mango and oregano. Cook until fish is no longer clear on medium flipping fish half way through.
