Berry Buckle (back of PC 4 Berry Blend)

Introduction

The cake on the back of the PC 4 Berry Blend bag. The cake on the back of the PC 4 Berry Blend bag.
Number of Servings: 12

Ingredients

    1 1/2 cups PC Organics All-Purpose Flour (I'm sure any would be fine)
    3/4 cup granulated sugar
    1 1/2 tsp backing powder
    1/2 tsp salt
    1 egg, beaten
    2/3 cups non fat milk (ingredients call for 2%, but I'm using skim)
    1/4 cup butter, melted and cooled
    1 tsp vanilla
    3 cups PC 4 berry blend
    *1/4 cup granulated sugar - I'm not doing this added sugar. It's supposed to be added into the berries, but I think the berries are sweet enough from their own natural sugar. Your choice to add this... but more calories if you do!

Directions

Preheat oven to 350 F. Spray 8 inch square glass baking dish and spray with cooking spray. (I'm using a tin rectangle.)

In bowl, stir together flour, 3/4 cup sugar, baking powder, and salt. In another bowl, whisk together eff, milk, butter, and vanilla; pour over flour mixture and stir to combine. Pour into prepared dish. Toss frozen berries with 1/4 cup sugar (optional). Sprinkle evenly over batter.

Bake in centre of oven for 55-60 min or until tester inserted into centre comes out clean. Cake will be moist; do not over bake. Cool on rack for 20 min.

Serve with vanilla ice cream.


I'm going to serve it with 1 cup frozen berries blended together with plain non fat yogurt. Ice cream has too many calories - this is healthier and not such a cash in for your numbers. If blended frozen, feels more like ice cream :)

My tip is to cut your cake 3X4. This way you get 12 servings.
