2 granny smith apples 2 red delicious apples 1 braeburn apple 2 TBSP lemon juice 3 ribs of celery 1/2 cup of chopped walnuts 4 TBSP of fat free mayo 12 oz of light vanilla yogurt salt and pepper to taste
cut up all apples into 1/2 inch pieces. Put in a bowl and toss with the lemon juice to keep from browning. Chop up the celery to desired size (I diced). Mix the celery in with the apples. Mix the yogurt and mayo together. Toss everything together, yogurt and mayo, nuts, craisins, apples and celery, and a pinch of salt and pepper to your liking. THIS MAKES 16-18 1/2 cup servings (depending on size of apples you use). Meant for a side salad.
